What Are Japanese Curry Cubes?

Japanese curry cubes are one of the easiest ways to get a cozy, flavorful meal on the table. They’re packed with spices, seasonings, and a natural thickener, so all you have to do is drop a cube into your pan and let it melt into a rich, savory sauce. No long ingredient list, no fuss,  just comforting curry in minutes. You can find them at pretty much any Asian grocery store, and even a lot of regular supermarkets now, which makes them a total weeknight lifesaver.

There are many brands available and this is my favorite one on the market!

Why Use Ground Beef in Japanese Curry?

Traditional Japanese curry usually uses chunks of beef, chicken, or pork that simmer slowly until tender. This version swaps that for ground beef, which cooks much faster and absorbs the curry flavor quickly.

Ground beef also creates a heartier texture because it spreads evenly throughout the sauce. Every spoonful has a little bit of savory beef mixed into the thick curry. It is also more affordable and practical for busy weeknights, making this an easy Japanese ground beef curry you can cook in about 30 minutes.

If you love classic Japanese curry but want something faster, ground beef is a great shortcut.

Key Tips for the Best Japanese Ground Beef Curry

Brown the ground beef thoroughly

  • Let the beef cook until deeply browned before adding any liquid. This builds rich, savory flavor and prevents the curry from tasting flat.

Cook the onions until soft and lightly golden

  • Taking a few extra minutes here allows the onions to release their natural sweetness, which balances the curry beautifully.

Add the curry roux off heat or on very low heat

  • Stirring in the roux when the heat is low prevents burning and keeps the sauce smooth and glossy.

Adjust seasoning to taste

  • For a sweeter curry, add a spoon of honey or grated apple. A splash of soy sauce deepens savoriness, while a spicier roux or pinch of chili powder adds gentle heat.

Let the curry rest before serving

  • Allowing the curry to sit for a few minutes helps the sauce thicken and gives the flavors time to fully come together.

The key to great Japanese ground beef curry is building flavor in layers. Browning the beef, properly softening the onions, and gently incorporating the curry roux all contribute to a rich, balanced sauce. A short resting time at the end ties everything together, resulting in a smooth, comforting curry that tastes even better with every bite.

What to Serve With Japanese Ground Beef Curry

Personally the only correct answer for me is RICE!

Steamed white rice is the classic pairing for Japanese ground beef curry. The thick, savory sauce is perfect for soaking into warm short grain rice.

You can also serve it with brown rice, udon noodles, or even over mashed potatoes for a twist. For a more complete meal, add simple sides like shredded cabbage, pickled vegetables, or a soft boiled egg.

However you serve it, rice remains the most traditional and comforting option.

Storage tips and meal-prepping

This curry stores extremely well (just like many braised dishes such as Cantonese braised beef brisket) and often tastes even better the next day. Let it cool completely, then store in an airtight container in the fridge for up to three days. Reheat gently on the stove or in the microwave, adding a splash of water if needed to loosen the sauce.

This ground beef curry is also perfect for meal prep. It makes a generous batch and reheats beautifully, which makes it ideal for busy weekdays. You can cook a larger portion at the start of the week, portion it out with rice, and have comforting meals ready to go in minutes. The flavors deepen after a day or two, so leftovers taste even better. It freezes well, so you can save a portion for those days when you want something homemade without cooking from scratch.
