Many Chinese households have a bag of these dried mushrooms stored in their pantry. For a rice dish like this where the mushroom flavor needs to carry through an entire pot of liquid, dried shiitake are more appropriate.

Don’t throw out the soaking liquid.

  • Once you have soaked your dried shiitake, take a look at the water. It will have turned a deep brown color from all the mushroom flavor that has leached into it.
