For the pork chops
- 2 Pork chops
- 2 tbsp Soy sauce
- 1 tbsp Oyster sauce
- 1/2 tsp Salt
- 1 tsp Cornstarch
- 1/2 tsp White pepper
- 2 slices Ginger
For the scallion oil
- 6 stalks Green onion, chopped
- 1 knob Ginger, grated
- 1 tsp Sesame seeds
- 1/2 tsp Salt
- 1/2 tsp White pepper
- 1/3 cup Oil
Tenderize the pork chops:Use the back of a knife to lightly pound the pork chops. This helps break down the fibers and keeps the meat tender. Marinate the pork:Add soy sauce, oyster sauce, salt, cornstarch, white pepper, and ginger slices. Mix well and let sit for at least 10–15 minutes. Make the scallion oil:In a bowl, combine chopped green onions, grated ginger, sesame seeds, salt, white pepper, and oil. Mix well and set aside. Sear the pork chops:Heat a pan over medium heat with a bit of oil. Cook pork chops for about 4 minutes per side until golden and cooked through. Add scallion oil:Spoon the scallion oil over the pork chops. Cover with a lid and cook on medium-low heat for 1 minute to infuse flavor. Slice and serve:Cut into pieces and serve over hot rice, spooning extra scallion oil on top.
