Ingredients

  • 1 Steak (any cut that you have)
  • 2 tbsp Soy sauce
  • 1 tsp Black pepper
  • 1/2 tsp Sugar
  • 1/2 tsp Baking soda
  • 2 Eggs
  • 2 cups Rice (from the fridge)
  • Salt & pepper to taste

Optional (use what you have!):

  • 3 medium Mushrooms, sliced
  • 2 cloves Garlic, diced
  • 1 Shallot, diced
  • 1/2 knob Ginger, sliced
  • 1/2 stalk Green onions, diced

Instructions

  • Prep the Steak: Cut the steak into bite-sized cubes. In a bowl, mix the steak with soy sauce, black pepper, sugar, and baking soda. Let it marinate while you prep the other ingredients.
  • Prepare Garlic oil: Slice and dice your garlic, ginger, shallots and mushrooms. Pan fry your garlic in a pan with about 3 tbsp oil. Once golden brown, set aside.
  • Cook the Steak: Heat the same pan over medium-high heat and drizzle in a little oil. Add the marinated steak in a single layer. Let it sear for about 30 seconds without moving, then cook for 3–4 minutes, turning to brown all sides. Adjust cooking time based on how you like your steak. Remove from pan and set aside.
  • Sauté Aromatics: In the same pan, add a bit more oil if needed. Sauté the mushrooms (if using) for 3-4 minutes until fragrant. Add the rest of the aromatics and cook until fragrant, another 1-2 minutes.
  • Cook the Eggs and Rice: Beat 2 eggs and add to pan. Scramble eggs until cooked then add your day-old rice (NO FRESH RICE!). Break up any clumps.
  • Finishing touches: Return the steak, garlic oil and green onions into the pan. Stir-fry on high heat for 2 minutes, mixing everything together. Taste and season with additional salt or pepper if needed.
  • Serve: Plate the fried rice hot, optionally garnish with extra green onions. Enjoy!
