Cut boneless chicken thighs into cubes. In a bowl, combine chicken with soy sauce, black pepper, and cornstarch. Mix well and let it sit for 5 to 10 minutes to absorb the flavor.

2. Make the sauce
In a small bowl, mix together garlic, honey, miso, and mirin. Add 2 tablespoons of water to loosen the sauce. Add more if it feels too thick or clumpy.

3. Cook the chicken
Heat a pan over medium low heat and add a bit of oil. Add the chicken in a single layer and cook for about 4 to 5 minutes on each side until fully cooked and lightly browned. If using large pieces, adjust cook time so it is fully cooked. 

4. Add sauce to chicken
Pour the sauce into the pan with the chicken.
Toss everything together and let it cook for about 30 seconds until the sauce thickens and coats the chicken. If sauce still feels too thick, add 1 tbsp of water to loosen it.

5. Serve
Serve hot over a bowl of rice!
