Baked Seafood Rice

If you’ve ever stepped into a Hong Kong cha chaan teng, you know the magic of baked seafood rice — golden, cheesy, bubbling on top, and packed with comforting flavor. It’s one of my all-time favorites, the kind of East-meets-West dish that feels both nostalgic and indulgent. Today I’m showing you how to bring that Hong Kong café classic right into your own kitchen.

One of the most iconic places in Hong Kong are its cha chaan tengs, or Hong Kong cafés. They are the heartbeat of the city’s food culture. They’re casual, bustling diners where you can find everything from milk tea to baked pork chops, curry, and comforting rice dishes.  They’re noisy, cozy, and full of comfort food that instantly feels like home. That’s why I’m starting “HK Café at Home”, a series where I recreate these nostalgic dishes in my own kitchen, one recipe at a time.

What better dish to start this series than my favorite dish? 

Ingredients

  • 3 cups of cooked rice (day old rice)
  • 3 Eggs 
  • ½ a diced Onion 
  • 1.5 cup of frozen seafood medley
  • 1 tsp of Salt
  • 1 tsp of White Pepper
  • 2 tbsp of Butter 
  • 2 tbsp of Flour 
  • 2 cups of Milk 
  • ½ cup of Cheese
  • Salt and pepper to taste

Step by step instructions

  1. Preheat the oven to 400 Fahrenheit
  2. Thaw the seafood medley and pat it dry. Season with salt and white pepper.
  3. Beat the eggs with a pinch of salt. Add to hot pan with oil and break up with spatula. Add day-old rice and make a basic egg fried rice.
  4. Cook seafood in the same pan for 3-4 minutes. Stack onto fried rice. 
  5. Melt butter in the pan and add chopped onions. Cook until translucent then add flour. Stir flour around the pan for 1-2 minutes to get rid of the flour taste. 
  6. Pour in milk and keep mixing until sauce becomes thick. Taste and season with salt and pepper. 
  7. Pour the cream sauce evenly on top. Sprinkle with lots of cheese.
  8. Bake in the preheated oven until bubbling and the top is golden. Broil briefly at the end if you want extra color.
  9. Let it rest a few minutes before serving.
